Brittany’s Bites: Peanut butter-stuffed onions

Peanut butter and onions make for an unusual but tasty combo in this week's dish.

Ingredients:

  • 3 large yellow or white onions
  • 4 Tbsps. bread crumbs (or stale bread broken up into crumbs)
  • 2 Tbsps. peanut butter

Directions:

  • Preheat oven to 350 degrees.
  • Peel and core onions.
  • In small bowl, combine bread crumbs and peanut butter until a paste is formed.
  • Tightly pack each onion with the peanut butter mixture.
  • Place in baking dish. Bake for 45 minutes to 1 hour until onions are soft.
  • Enjoy!
