MINNEAPOLIS (AP) — A 12-year-old Minnesota girl will head to the White House this week for a meal with the first lady.
Sophie Bollin's quinoa and black beans recipe was selected as the top Minnesota entry in Michelle Obama's Healthy Lunchtime Challenge. The contest called on children to create healthy and affordable lunchtime recipes with the supervision of a parent or guardian.
Entries had to include each of the main food groups, with an emphasis on fruits and vegetables.
The Star Tribune reports (http://strib.mn/1nJVLpa ) the Maplewood girl's recipe was selected from more than 1,500 submissions.
Winners from each state and U.S. territory will celebrate healthy eating with the first lady at the Kids' State Dinner.
Sophie and her mother, Deborah Webster, will arrive in Washington, D.C., on Thursday.
